Mini Strawberry Cheesecake Desserts: Meal for You Monday!

I decided to get a little creative with my .99 strawberries from Sprouts Farmer’s Market  this week by making these cute little Mini Strawberry Cheesecake Desserts. I attended a potluck dinner on Saturday night and was charged with bringing a dessert, so this ended up being the perfect yummy addition!

Here is the recipe which I adapted from Rachel Ray’s Individual No-Bake Strawberry Cheesecakes.

Mini Strawberry Cheesecake Desserts

Ingredients

2 lbs Strawberries
(2) 8oz Bricks of Cream Cheese (softened)
1-1/2 Cups Sour Cream
2 Teaspoons Vanilla
2 Cups Powdered Sugar
12 Individual Graham Cracker Crusts

Directions

1. Add 1 lb of strawberries, cream cheese, sour cream, vanilla and powdered sugar to a food processor and process until a smooth mixture is created.
*This may need to be done in two batches depending on the size of your processor.

2. Cut the bottom corner off of a large plastic bag and fill it with the strawberry mixture. Use bag to squeeze mixture into individual graham cracker crusts.

3. Garnish each dessert with a single sliced strawberry.

I love this Jennie!! Of course I love food, so how could a picture of strawberries and cheesecake not be amazing to look at! It looks so yummy!

These are deeeelish!!!! I made them for my sons birthday instead of cake 2 years ago. They were a hit and cleanup was super easy!!!!
