I’ve had many requests to bring back our Meal for You Monday recipes and while I’m not sure we’ll be sharing one with you every week, I am bringing it back!
Today’s recipe is one of my favorites for summer: 10 Minute Chicken Lettuce Wraps. Not only are these perfect for a light lunch or dinner on a warm day, but they are super easy to make and very inexpensive!
- 1 Head of Lettuce
- 1 1.25oz Packet of Sun Bird Chicken Lettuce Wrap Seasoning
- 2 Medium Chicken Breasts (finely diced)
- 1 Tbsp Olive Oil
- 3oz Chow Mein Noodles
- 2 Tbsp Brown Sugar (optional)
- Warm olive oil in medium sized frying pan, add finely diced chicken and stir-fry over medium heat until chicken is cooked through. Add seasoning mix, water and brown sugar (optional for added sweetness) and stir-fry for 5-8 minutes or until water is incorporated into the sauce. Serve chicken inside lettuce pieces and topped with chow mein noodles.
