Safeway recently introduced me to their Sugar and Spice Cocktail Pairings and Desserts [2]. Since I don’t drink I was a little concerned that I wasn’t going to be able to find anything that I like, but as soon as I spotted the Homemade Eggnog and Macadamia Cake [3], I knew which pairing was for me. I’ve always heard that homemade eggnog is amazing, but have not really given much thought to making it at home. I guess I thought it would be really difficult or require a bunch of expensive ingredients.
Well, I was wrong! This recipe was not hard at all and it also was not very expensive. I was also able to make a few adjustments to it that brought the cost down even more. Instead of using whole cloves I used the ground cloves that I already had on hand and rather than using light cream I picked up some half and half. I also omitted the rum that is called for in the recipe.
Okay, now you all have to trust me on this…you simply must try this recipe out. The final product is absolutely life changing and I doubt that I’ll ever buy eggnog from the store again! Oh and if you want to follow the recipe to the “T”, make sure that you do not do what I did. The recipe tells you to let it sit in the fridge over night, but mine didn’t make it that far. As soon as I tested my first spoonful, that was the end of that waiting over night craziness. I seriously am not sure how they would expect anyone to wait after trying a drop of this stuff. 😉
The Macadamia “Cake” that pairs up with the homemade eggnog is almost equally delicious. I would say that it is more like a bread than a cake, but I’m actually glad it was since it helped to counter the sweetness of the eggnog. The only change I made to this recipe was actually by mistake and it was because I accidentally bought cherry flavored Craisins instead of dried cherries. Honestly, I’m glad that happened because they were a lot less expensive and tasted just fine. In fact, if I were to make this “cake” again, I’d still use the cherry flavored Craisins.
